Effect of Cassava Starch-Based Composite Coating on the Postharvest Softening Index and Physicochemical Parameters of Dacryodes edulis Fruits

Abstract:

The safou (Dacryodes edulis) is an important seasonal fruit, but 50% of the harvest is lost due to its short shelf life of just two or three days, which reduces its economic value. This study aimed to formulate edible coatings to extend the shelf life of safou. Different blends were prepared by mixing cassava starch with various concentrations of glycerol and potassium sorbate to produce different types of gel coating. The results showed that a coating containing 20% glycerol and 5% potassium sorbate (G20S5) was the most effective at extending the shelf life of fresh safou fruit. Furthermore, no significant variation in physicochemical parameters such as pH, weight loss, water content, ash content, protein content, lipid content, total carbohydrate content and fibre content was observed in the coated fruit during the first nine days. Therefore, the G20S5 coating formulation delays the biochemical deterioration and post-harvest senescence of safou fruit for nine days while maintaining its nutritional quality at room temperature.
