Abstract:

Freshly harvested and fully matured pomegranate fruits variety (Bhagwa) was procured from nearby private orchard. The physical and mechanical properties pomegranate fruits and arils were determined which are required in design of various cleaning, grading, transporting, juice extractor machines, packaging equipments etc. The physical properties of pomegranate fruits (var. Bhagwa) and arils were found that the length, thickness, width, geometric mean diameter, sphericity, aspect ratio and surface area, with their standard deviation and mean were 76.56±3.91 mm, 72.61±2.85 mm, 68.81±3.55 mm, 72.39±2 mm, 0.948±0.049, 0.945±0.067, 227.30±6.29 mm2 and 9.91±1.27 mm, 7.81±0.93 mm, 6.149±0.826 mm, 7.80±0.843 mm, 0.791±0.06, 0.80±0.09, 24.50±2.65 mm2, respectively. The other physical properties such as bulk density, true density, porosity, density ratio were determined for pomegranate fruits and arils were found as 651.23±26.29 kg/m3, 980.11±26.55 kg/m3, 33.48±3.84 %, 0.66±0.04 and 584.54±55.50 kg/m3, 1039.16 ± 22.47 kg/m3, 43±5.72 %, 0.56±0.06, respectively. The average coefficient of friction of pomegranate fruit and arils on glass, galvanized iron and wood were found as 0.437±0.030, 0.794±0.04 and 0.857±0.01 and 0.354±0.027, 0.523±0.016, 0.574±0.01, respectively. The mechanical properties of pomegranate fruit and arils, such as average cutting force, hardness and crushing force of pomegranate fruit and crushing force for arils were found as 22.28±1.115, 45.59±0.886, 25±0.823 and 1.65 kgf, respectively.

Keywords: Shpericity, Bulk density, Coefficient of friction, Cutting force, Crushing force, Hardness.
