Abstract:

The objective of this study was to investigate the extracellular enzymatic profile of the yeast isolated from different dairy products. In present study, a total 112 yeasts isolate was obtained. These isolates were screened for the presence of extracellular β-galactosidase enzyme. Among total isolates, 45 were found positive for the presence of β-galactosidase, in which 10 isolates exhibited very strong β-gal activity. The most promising and highest β-gal activity showing yeasts were identified using PCR techniques up to genus and they were identified as species of genus Klyuveromyces. In addition to β-gal activity, those highest β-gal activity showing potent isolates was also assayed for detecting other extracellular enzymes such as protease, amylase, lipase, L-asparaginase activity and for exoplysaccharide production. Yeasts derived extracellular enzymes are used in various industries such as pharmaceutical, dairy industry, bio-fuel generation and brewing production etc. and also in the bioremediation of waste water. Out of ten most promising yeast isolates, two isolate named CH2 and D3, did not show presence of any above enzymes for which they were screened production.
