Abstract:

Biopolymers based food grade additives and their applications constantly increasing in food and medical industries. Polysaccharides are an indispensable component of many foods. Digestible polysaccharides are a good source of calories and glucose needed for normal metabolic process in the body. It was concluded that Beta glucan with optimization was estimated with 0.450mg/20 ml only extraction yield was estimated as 0.20mg/20ml. This showed optimization could improve the yield of beta glucan from Saccharomyces cerevisae. Also, the polymer sheet texture, elasticity and durability found more suitable.

Keywords: Biopolymer, Saccharomyces, beta glucan Food grade polymer
