Edible mushrooms are increasingly recognized as valuable food resources with significant nutritional, functional, and sanitary attributes, alongside emerging innovations to enhance their food quality and safety. This review synthesizes current knowledge on microbial and chemical contamination risks in edible mushrooms, highlighting prevalent bacterial pathogens, fungal contaminants, and bioaccumulated heavy metals and pesticides. Variability in contamination levels across species and ecological zones underscores the need for targeted hygienic practices, environmental monitoring, and regulatory oversight. Innovations such as hygienic cultivation and harvesting techniques, smart packaging with controlled atmosphere storage, advanced post-harvest treatments, and cutting-edge analytical technologies are transforming mushroom production, improving shelf life, and ensuring food safety compliance. Despite these advances, challenges remain in post-harvest conservation, standardization of indigenous species’ valorization, and integration of mushrooms into novel food products like fortified flours, functional beverages, and nutrient-enriched pastries. Addressing these challenges through multidisciplinary research, capacity building, and policy support is essential to unlock the full potential of edible mushrooms as sustainable, functional foods that contribute to improved nutrition and public health in Africa and globally.
