Mathematical Modelling of Thin Layer Drying Kinetics of Amla-Beet Root Shreds

Abstract:

Drying kinetics of amla- beet root shreds in tray dryer was studied at 55, 65 and 75oC air temperatures. Drying of shreds occurred completely in falling rate period. Four thin layer drying models were fitted to the experimental moisture ratio data. Among the mathematical models investigated, the logarithmic model satisfactorily described the drying behaviour of shreds with high r2 values.
