The aim of this study was the molecular identification of bacteria isolated from fermented chillies in markets in Congo (Republic of Congo). Enumeration and isolation were carried out on Mossel and PCA media; amplification and sequencing of 16S RNA genes were performed by PCR and Artic Oxford Nanopore Technology. Results showed bacterial loads ranging from 3.01.104 CFU/g to 3.5.104 CFU/g on PCA and 4,7.104 CFU/g to 5.7.104 UFC/g on mossel respectively for samples 1, 2 from Brazzaville, compared with 3.3.104 UFC/g to 7.3.104 UFC/g on PCA and 7.1.104 UFC/g to 8.2.104 UFC/g for samples from nkayi. After PCR, agarose gel electrophoresis, sequencing and bioinformatics analysis, the 16S rRNA of these isolates was analyzed to identify eight (05) strains with 100% similarities, whose gene sequences were placed in GenBank to obtain corresponding accession numbers. Bacillus anthracis (ON303634), Bacillus subtilis (ON319063), Bacillus tropicus (ON319064), Bacillus cereus (ON319065), Bacillus cereus (ON319066). Phylogenetic classification was performed using Bacillus strains.
